Blueberry Pancakes with Buttermilk
Ingredients :
- 1 1/2 cups self-raising flour
- 2 tablespoon white sugar
- 1 1/2 cup buttermilk
- 1 egg. lightly beaten
- 1 tablespoon melted margarine
- 1 cup blueberries
- 1/2 cup bluberries for the sauce
- 1 tablespoon of white sugar for the sauce
How to make :
- Sift flour into a bowl, add sugar, buttermilk, egg and margarine.
- Beat it until the batter is smooth.
- Pre-heat a non stick and spray the frying pan with cooking spray over a medium heat.
- Cook pancakes one at a time by pouring it with soup ladle. Best if you have an egg ring to keep the same pancake size.
- Add blueberries into the uncooked batter in the pan.
- Cook pancakes for approximately 1-2 minutes or until bubbles appear in the uncooked batter.
- Turn the pancake over and cook for a further 1-2 minutes.
- You can serve it immediately or keep it in the freezer to eat. Leave it cool completely before put in the freezer.
